Mediterranean Pork Fillet with Prosciutto



Mediterranean Pork Fillet with Prosciutto

Served with fried Zuccini & Squash salad



Ingredients

  • Pork fillet, 400-500 g
  • Prosciutto, 12 slices
  • Fetta cheese
  • Zuccini, 3 medium size
  • Squash, 2 medium size
  • Red chilli
  • Mint
  • Garlic, 5 cloves
  • Extra vergine olive oil


Recipe

Slice the pork fillet into 1.5 cm slices and make a cut in the middle. Squeeze dice sized fetta cheese in to the cut. Cover with prosciutto.

Heat up pan medium heat and fry pork fillets prosciutto size down first until crisp.

Slice zuccini and squash and throw them into a frying pan with olive oil. Squeeze and add garlic. Fry for 5 minutes and add chopped mint and chilli stuff.

Serve pork fillets on top of fried zuccini salad.
